10 months in whiskey barrel

Once a year, Chopfab Boxer brews a specialty beer under the Cosmos Barrel Aged line that is aged in barrels for several months. With the latest creation - Cosmos Barrel Aged 05 Imperial Scotch Ale - a real piece of Scotland now comes into the beer glass.

The specialty is based on a Scotch Ale - a dark and very strong type of beer from Scotland. "Using various dark malts, we brewed a strong, top-fermented beer with an original wort of 28°P in a special process," explains brewmaster Patrick Thomi. The brewers used a highly fermenting Scottish yeast for this, which is capable of converting the high sugar content in the mash into alcohol. After fermentation in the tank, they filled the Scotch Ale into used whisky barrels, where it was allowed to mature for ten months to become a truly unique product.

The barrels are the key ingredient! The choice fell on used oak barrels from the Tomintoul Distillery. "Before they arrived with us in Winterthur, slightly smoky whisky from Speyside matured in them for many years. Our beer penetrates the wood during aging and absorbs these aromas," says Patrick.

The specialty (12.3% by volume) has a sweet taste with full-bodied malt and wood aromas. Lingering notes of smoke and peaty whiskey characterize the finish. This exclusivity is best enjoyed with hearty dishes, such as a grilled steak of Highland beef or rack of lamb. But also on its own or accompanied by a cigar, this specialty offers unique moments of pleasure.
