Marine essences play an important role. There are many varieties of seaweed, each with its own characteristic flavour. To find the best flavour profile, experiments were carried out with over ten different types of seaweed.
A mix of kelp and red algae finally convinced. Hendrick's master distiller Lesley Gracie also uses thyme from the coast and limes.
